Jacket Potato Breakfast - Pancetta and Cheese

What's better than waking up early, having a nice warm cup of coffee and some decent breakfast to go with it?

So this morning I took one left over potato from last night, it had been boiled but not too much so the texture was actually still decent.

I then digged a bit of a hole in it and filled it up with some nice Raschera cheese, which is an Italian cheese that melts really well and some sliced pancetta, flavoured with herbs and spices.


Five minutes in a hot oven and it was done, really good filling breakfast.



Obviously ended up dousing it with some green Jalapeno Tabasco just to add a little bit of edge to it, as I reckon it enhances any dish.
